For our newbies, the KFB foodie talk column - handled by Dobby of Dobbysignature - is basically for ladies and 'guys' that are interested in learning how to cook better ;).

I love plantain and I buy a lot of it. The sad part is that when it gets too ripe, it becomes quite useless to me. What do I do next? I toss it into the garbage bin. Waste of plantain, waste of food, waste of money. Not nice at all! Not nice when there are kids all around Africa starving.
I started thinking. How do I recycle overly ripe plantain? Ukwaka came to my mind but I wanted something nice and easy…something you could enjoy with beverages or ice-cream, something you could serve as desert and then PLANTAIN BREAD came to my head. Bingo! I was like, hmmmm…if there is banana bread, I sure can make bread out of plantain…even make a cake out of it. Well, this is how the journey began…to a soft, lovely bread that is so easy to prepare and yet, so delicious to eat. You can also check out my Chocolate cake for more yummy things to eat.

Prep time: 20 minutes
Cook time: 1 – 1 hour 10 minutes
Total time: 1 hour 30 minutes
Meal type: Snack, desert, breakfast
Misc: Serve at room temperature.
Ingredients:
2 very ripe plantain
80g melted butter
140g granulated white sugar
1 egg (beaten)
200g all purpose flour
1 tsp. vanilla extract
1 tsp. baking soda
Pinch of salt
Preparation:
Step 1:
Peel the plantain, cut it into small chunks and mash with a masher.
Step 2:
Add the butter and blend it in with a wooden spatula. Add the salt and bicarbonate of soda and mix in. Follow with the sugar.
Step 3:
After mixing properly, pour in the beaten egg. Mix once more. Add the vanilla essence, continue stirring. Finally sieve the flour into the mixture and properly blend together.
Step 4:
See the consistency of the bread mix? Good! Grease a bread pan with some butter. I sprinkled some sugar over the butter (don't mind me ) Pour the bread mix into the greased pan and spread evenly. Bake in a pre-heated oven ( 350 degree Fahrenheit or 175 degree Celsius) for 1 hour to 1 hour 10 minutes. When done, that is if your tooth pick comes out clean, set aside and allow to cool. Serve when cool.

NB: To store, wrap it up in a polythene bag or in an air tight bowl with a lid and keep in the fridge. To keep for a longer time, put the bread in the freezer and thaw when ready to consume.
